Kayseri Dumplings Recipe (Kayseri Mantısı)

Directions

In a large mixing bowl, combine the flour, egg, water, and salt. Knead the dough until smooth and elastic. Cover and let rest for 30 minutes. Meanwhile, prepare the filling by mixing the ground beef, finely chopped onion, salt, and pepper in a separate bowl.

Divide the dough into small portions and roll each portion into a thin sheet. Cut the sheets into small squares. Place a small amount of the meat filling in the center of each square. Fold the squares into a triangular shape, pinching the edges to seal.

In a large pot, bring salted water to a boil. Add the mantı and cook until they float to the surface and are tender, about 10-12 minutes. Drain and set aside.

In a small saucepan, melt the butter and stir in the paprika and mint. Pour the butter mixture over the cooked mantı. Serve with a generous dollop of yogurt and a sprinkle of sumac if desired.
