Iskender Doner Kebab Recipe (İskender Döner)

Directions

In a large bowl, combine the ground lamb or beef, grated onion, minced garlic, yogurt, olive oil, paprika, cumin, salt, and pepper. Mix well and let marinate in the refrigerator for at least 1 hour.

Preheat a grill or grill pan to medium-high heat. Shape the meat mixture into a large, flat loaf. Grill the meat, turning occasionally, until cooked through and slightly charred, about 15-20 minutes. Let the meat rest for a few minutes before slicing thinly.

In a small saucepan, melt the butter over medium heat. Add the tomato paste and cook, stirring, for 2-3 minutes. Stir in the water and season with salt and pepper. Simmer for about 5 minutes, until slightly thickened.

To assemble, arrange pita bread or Turkish flatbread pieces on a serving platter. Top with the sliced döner meat. Spoon the tomato sauce over the meat and drizzle with melted butter. Serve with a dollop of yogurt on the side and garnish with chopped parsley if desired.
