Eggplant Kebab Recipe (Patlıcan Kebap)

Directions

Slice the eggplants into thick rounds and soak them in salted water for about 30 minutes to remove bitterness. In a bowl, combine the ground meat, chopped onion, garlic, parsley, salt, pepper, and spices. Mix well and shape the mixture into small patties. Pat dry the eggplant slices and grill or fry them until golden brown on both sides. Layer the eggplant slices and meat patties in a baking dish, alternating them. Drizzle with olive oil and bake in a preheated oven at 180°C (350°F) for about 30-35 minutes until cooked through. Serve hot with rice or flatbread.
