Directions

In a large bowl, combine the ground lamb, finely chopped onion, minced garlic, and red bell pepper. Add the paprika, cumin, red pepper flakes, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld.

Preheat your grill to high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Divide the meat mixture into 8 equal portions. With wet hands, mold each portion around a skewer, forming it into a long, flat shape about 1 inch thick. Make sure the meat is securely attached to the skewers.

Grill the kebabs for about 4-5 minutes on each side, or until cooked through and nicely charred. Be careful not to overcook them to keep the kebabs juicy.

Serve hot, garnished with chopped parsley and accompanied by grilled vegetables, flatbread, and lemon wedges.
