Stuffed Artichokes Recipe (Enginar Dolması)

Directions

  1. In a large bowl, mix together rice, chopped onion, parsley, dill, mint, pine nuts, currants, olive oil, salt, and pepper.
  2. Gently open the artichokes and remove the hairy choke in the center. Fill each artichoke with the rice mixture, pressing it in gently.
  3. Place the filled artichokes in a large pot. Add water and lemon juice to the pot, enough to come halfway up the sides of the artichokes.
  4. Cover and bring to a boil. Reduce heat and simmer for about 45 minutes, or until the artichokes are tender and the rice is cooked.
  5. Remove from heat and let cool slightly before serving. Drizzle with extra olive oil and lemon juice if desired.
