Directions

  1. In a large bowl, combine cooked beans, chopped onions, tomatoes, and parsley.
  2. In a separate small bowl, whisk together olive oil, vinegar, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  5. Before serving, garnish with sliced hard-boiled eggs and olives if desired.
