Turkish Bulgur Salad Recipe (Kısır)

Directions

  1. Prepare Bulgur Wheat:
    • Place the fine bulgur wheat in a large bowl. Pour enough hot water over the bulgur to cover it by about 1 inch. Let it soak for 10-15 minutes until the bulgur absorbs all the water and becomes tender. Fluff the bulgur with a fork to separate the grains.
  2. Prepare Vegetables:
    • Finely chop the fresh parsley, green onions, tomatoes, and cucumber. Add them to the bowl with the soaked bulgur wheat.
  3. Make Dressing:
    • In a small bowl, whisk together olive oil, pomegranate molasses, lemon juice, tomato paste, salt, pepper, and red pepper flakes (if using) until well combined.
  4. Combine and Mix:
    • Pour the prepared dressing over the bulgur and vegetable mixture. Toss everything together until the bulgur is well coated with the dressing.
  5. Add Fresh Mint:
    • Add chopped fresh mint to the salad and gently mix it in to distribute evenly.
  6. Chill and Serve:
    • Cover the bowl with plastic wrap or a lid and refrigerate the kısır for at least 1 hour to allow the flavors to meld together.
  7. Garnish and Serve:
    • Before serving, garnish the kısır with lettuce leaves and lemon wedges for a fresh presentation.
