Turkish Lentil Balls Recipe (Mercimek Köftesi)

Directions

  1. Cook Lentils: In a medium saucepan, bring water to a boil. Add red lentils and cook for about 15-20 minutes, or until tender. Drain any excess water and let the lentils cool.
  2. Prepare Vegetables: Finely chop onions, green onions, parsley, and mint leaves.
  3. Combine Ingredients: In a large bowl, mix together cooked red lentils, chopped onions, green onions, parsley, mint leaves, bulgur, tomato paste, olive oil, cumin, paprika, salt, and pepper.
  4. Form Köftes: Take a small amount of the mixture and shape it into small oval or round köftes (balls or patties). Repeat until all the mixture is used.
  5. Serve: Arrange the köftes on a serving platter. Garnish with lettuce leaves, parsley sprigs, and lemon wedges.
