Raw Vegan Meatballs Recipe (Etsiz Çiğ Köfte)

Directions

In a large mixing bowl, combine the fine bulgur, hot water, and tomato paste. Mix well and let it sit for 10 minutes until the bulgur absorbs the water and softens. In a food processor, blend the onions, garlic, and green onions until finely chopped. Add the chopped mixture to the bulgur along with the red pepper paste, olive oil, pomegranate molasses, cumin, paprika, black pepper, and salt. Knead the mixture by hand for about 15-20 minutes until it becomes smooth and well combined. Add the finely chopped parsley and continue kneading for another 5 minutes. Shape the mixture into small patties or bite-sized pieces. Arrange the çiğ köfte on a serving platter. Serve with lettuce leaves, fresh herbs, and lemon wedges.
