Turkish Yogurt Soup Recipe (Yayla Çorbası)

Directions

In a pot, bring the water to a boil and add the rice. Cook until the rice is tender. In a separate bowl, whisk together the yogurt, egg, and flour until smooth. Gradually add some hot broth from the pot to the yogurt mixture to temper it. Then, slowly pour the yogurt mixture into the pot while stirring continuously. Add the cooked rice and season with salt and pepper. Let the soup simmer for about 10-15 minutes, stirring occasionally. In a small pan, melt the butter and add the mint. Cook until fragrant, then drizzle over the soup before serving. Serve hot, garnished with additional dried mint if desired.
