Olive Oil Zucchini Recipe (Zeytinyağlı Kabak)

Wash and slice the zucchinis into rounds or half-moons. In a large skillet, heat the olive oil over medium heat and add the chopped onions. Sauté until they are translucent. Add the sliced zucchinis and cook for about 5-7 minutes, stirring occasionally. Stir in the chopped tomatoes, salt, black pepper, and sugar. Add a little water if necessary to prevent sticking. Cover the skillet and simmer for about 20-25 minutes until the zucchinis are tender. Remove from heat and let it cool slightly. Serve warm or at room temperature, garnished with chopped parsley.
