Artichokes in Olive Oil Recipe (Zeytinyağlı Enginar)

Clean the artichokes by removing the outer leaves and cutting off the stems. In a pot, combine the cleaned artichokes with water, lemon juice, and a little salt. Simmer for about 20-25 minutes until tender. In a skillet, heat the olive oil and sauté the chopped onions and carrots until soft. Add the peas and cook for a few more minutes. Once the artichokes are cooked, arrange them in a serving dish and fill the centers with the vegetable mixture. Drizzle with more olive oil and serve at room temperature, garnished with fresh parsley.
